A dense and smooth, lightly yellow cheese with a uniquely savoury taste, which is best revealed when pared into pretty rosettes with the Cheese Curler also known as ‘Girolle originale’.
The name ‘Monk head’ clearly refers to the rosettes, that resemble the hair style of monks in medieval times, when this fine cheese was first created.
