 Saint-Félicien is at its best from April to September, after a 4–6 week maturation.

Its rind is soft, creamy, and delicately wrinkled, while the interior ranges from firm to almost runny. The flavour is gently nutty and beautifully smooth.

It pairs wonderfully with a strong red such as a Jura straw wine.
