The bunch of grapes destined for this wine are the first to be harvested. They need to be perctly healthy. They are then displayed in crates with some straw and kept in dried and ventilated room. They will stay there for a few months whilst being checked everyday by the wine-grower. At Christmas, the withered bunch of grapes, dehydrated and filled with sugar are pressed. 100kg of harvest can only offer 15 to 18 litres of must. The juice, left to ferment, will achieve 15/16°C but not all of it will be transformed in sugar.
